I went on a bulk where I ate about 20% over maintenance and I gained to much belly fat compared to the muscle I accumulated, so I decided to cut back down now I'm starting at a 10% surplus. Maintenece for me is 2700 and I'm eating 3000 now. My question is at what weight will 3000 no longer be enough to gain and do I add another 10% onto the 3000 or figure out what my maintenance is every 5lbs and go up 10% from there?

You can gain by simply going 300 - 500 cals over your maintenance depending on how hard you train. That old school bulking shit is for the birds.

Increase food as you hit plateaus in your weight... Don't increase any more frequently than that.

Pay attention to how much of the weight gain appears to be fat/bloat vs lean tissue. Adding calories doesn't help if you're just getting fatter and fatter.

Ok but doesn't your maintence calories increase as you get bigger? So do I keep calculating my maintenence calories every time i gain like 5 or 10lbs?

Forget percentages... Use whole numbers for calories. Increase by another 100 to 300 calories... Less is more, don't make huge jumps in caloric intake.

It'd be helpful if we could see your physique. Can you post a front and back picture?

When your weight gain plateaus, whatever calories that you're currently eating IS your new maintenance calories, by definition, because you're maintaining your weight.

When your weight gain stalls for at least a week, preferably two, bump your Cals up by about 10%. So instead of 3,000 eat 3,300.

General rule of thumb, only try to gain 0.25%-0.5% of your bodyweight per week, on average, so you don't add unnecessary fat.
