On protein, others mentioned fish and nuts. There's also hummus and whole grain rice. At 5'2" I don't imagine you weigh that much, plus you said you were skinny. To get a gram per pound of body weight shouldn't be that hard. Also, Halo Top ice cream.. 🤤

Hummus and rice aren’t complete proteins neither are nuts.
I have people only count complete proteins

Welcome to the UG. I'd focus on the basics and heal that knee. Calculate your TDEE and find a program you can stick to, that motivates you and keeps you coming back. Pull ups, push ups, lunges, giant sets that get your heart rate up as tough mudders demand endurance! As long as you're consistent you'll hit your goals in no time.

Maybe try out a set of good knee sleeves for leg days. Helps with circulation and stability.
