I’m not sure how much I was eating before, a lot less carbs for sure, maybe 150 grams of protein and 40 grams of fat.

Ok, so if you were eating a lot less carbs before, we'll go with you were eating 150g then vs the 250g now.

Assuming your numbers are close to accurate, you were only eating about 1,600 Cals before. That's a starvation diet based upon your activity level.

Keep your Cals where they are now, and expect a weight gain stall soon, and having to increase them. You're refilling the fuel tank right now, it's only been two weeks.

If anything, I'd drop your fats a little, and replace those Cals with more carbohydrates.
